One-Tray Turmeric Chicken & Sweet Potato is a wholesome, fuss-free meal that delivers maximum flavour with minimal cleanup. Roasted together on a single tray, it's ideal for batch cooking and meal prep, providing balanced nutrition for several meals. Ingredients
Main
- 8 boneless chicken thighs (about 1kg)
- 600g sweet potatoes, cubed
- 400g broccoli florets
- 1 large red onion, wedges
- 2 tbsp olive oil
Marinade
- 2 tbsp grated ginger
- 4 cloves garlic, minced
- 2 tsp ground turmeric
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp black pepper
- 1½ tsp sea salt
- 1 tbsp honey
- 1 tbsp soy sauce
- Juice of 1 lime
- 1 tbsp olive oil

Optional: Yoghurt Sauce
- 200g Greek yoghurt
- Juice ½ lemon
- 1 tsp honey
- Pinch salt
- Chopped parsley

Method
- Preheat oven to 200°C
- Mix all marinade ingredients.
- Coat chicken thoroughly.
- Marinate 30 minutes (or overnight)
On one baking tray add
- Sweet potatoes and onions
- Drizzle 1 tbsp olive oil
- Season lightly.
- Place chicken on top.
Cook
- Bake for 25 minutes then add broccoli.
- Bake another 10 minutes.
Chicken should reach 75°C internal temperature.
[Optional] Broil 2–3 minutes for golden colour.
