This Lion’s Mane Omelette combines the fluffy comfort of eggs with the cognitive-supporting benefits of lion’s mane mushrooms, prized for their potential to aid focus, memory, and overall nervous system health.

INGREDIENTS 

  • 100gm - Fresh Lion's Mane Mushrooms torn into bite sized portion
  • 3  - Large Eggs 
  • 10gm - Butter 
  • 1 Tsp (1gm) - Olive Oil 
  • [Optional for fluffiness] 1 Tbsp (15gm) - Milk or Cream
    Vegan Substitute : Coconut Cream, Cashew Cream or Soy Milk with Oil
  • Salt to taste 
  • Freshly cracked black pepper to taste
  • Chopped chives or parsley for garnish 
  • Optional add-ons : Shredded cheese / fresh diced tomatoes / Caramelised Onions / Spinach

METHOD 

  1. Sauté Mushrooms. Heat olive oil and half the butter in a pan. Cook mushrooms 5-6 mins until golden. Season with salt and pepper. Set aside. 

  2. Whisk eggs with milk, salt and pepper. 

  3. Cook omelette, melt remaining butter. Pour in eggs, cook gently and stir until just set. 

  4. Fill & fold, add mushrooms (and any optional add-ons). Fold and cook 30 seconds more. 

  5. Garnish with chives. Serve hot.
