Korean Japchae

A colourful vegetarian japchae-inspired recipe with sweet potato starch noodles, tofu, shiitake mushrooms, spinach, carrots, and peppers for a satisfying metabolism-supporting meal.

Ingredients

  • Dangmyeon (sweet potato starch noodles)
  • Spinach (blanched)
  • Carrot (julienned)
  • Red bell pepper (julienned)
  • Shiitake mushrooms (or use some from Dish 1)
  • Firm tofu strips (or baked tofu)
  • Soy sauce,
  • Sesame oil, 
  • Garlic
  • Brown sugar
  • Toasted sesame seeds
