Korean Braised Fresh Shiitake Mushrooms (Jangjorim-style)

Named after the classic Korean soy-braised beef dish, but 100% plant-based.

Ingredients 

  • Fresh shiitake mushrooms
  • Soy sauce
  • Garlic, ginger, spring onion
  • Brown sugar
  • Toasted sesame oil
  • Optional: Korean chili powder (gochugaru) for gentle heat

Korean twist

Add a boiled quail egg (optional for non-vegans) or small potato cubes during braising — common in jangjorim.
