Creamy Lion's Mane Pasta by Golden Cap Farm

INGREDIENTS

  • 200gm - Lion's Mane Mushrooms (sliced or torn) / Oyster Mushrooms

  • 160gm - Pasta (any) 

  • 2 Cloves, minced - Garlic

  • 1 small, finely chopped - Shallot or 1/4 Onion 

  • 1 Tbsp (15gm) - Butter
    Vegan Substitute:  Dry sauté mushrooms  without any oil

  • 1 Tbsp (15gm) - Olive Oil / Avocado Oil 

  • 150ml - Heavy cream
    Vegan Substitute: Hummus / Nut butter

  • 30gm grated - Parmesan Cheese

  • Salt and Pepper to taste

  • Fresh Parsley - Chopped for garnish 

  • Optional : 2 Tbsp - White Wine / Shiitake mushroom stock 

METHOD

  1. Cook the pasta: Boil pasta in salted water until al-dente; reserve 1/2 cup pasta water, then drain and set aside. 

  2. Sauté mushrooms: Heat olive oil and butter (omit butter for vegans) in a pan; add mushrooms and sear until golden and tender (5-6mins), then season lightly. 

  3. Add aromatics: Stir in shallots and garlic; sauté 1-2 minutes until fragrant, deglazing with white wine (or mushroom stock) if using. 

  4. Make cream sauce: Reduce heat, add cream (or vegan substitute as above) and simmer 2-3 minutes, then stir in parmesan (omit this for Vegans) and a splash of pasta water to loosen. 

  5. Toss and serve: Add pasta to the sauce; toss to coat evenly, season with salt and pepper, top with parsley and more parmesan (or nuts / grated dried shiitake powder)
