Cold Soba Noodle Jar (Meal Prep) by Chef Benson

Cold Soba in a Jar is a refreshing, balanced meal that's perfect for busy days. Layered with wholesome ingredients and a flavourful dressing, it's easy to prepare in advance, convenient to grab on the go, and stays fresh in the refrigerator. Rich in fibre, plant-based protein, and colourful vegetables, it provides sustained energy while making healthy eating both simple and delicious.

 

Yield: 4 jars (750ml each)

Preparation time: 25 minutes

Storage: 3–4 days refrigerated

Ingredients

 Noodles

  • 320g dried soba noodles
  • Ice water for chilling 

Vegetables

  • 2 medium carrots (200g), julienned
  • 1 Japanese cucumber (180g), thinly sliced
  • 200g shelled edamame (cooked)
  • 20g spring onions, sliced
  • 2 tbsp white sesame seeds
  • [Optional] 40g shredded purple cabbage for colour
  • [Optional]  microgreens or cress

Sesame Soy Dressing

 * 80ml Japanese soy sauce

* 40ml rice vinegar

  • 30ml sesame oil
  • 20ml honey
  • 15ml mirin 
    (alternatively, mix 1 tablespoon of rice vinegar with 1/2 teaspoon of sugar) 
  • 15ml fresh lime juice
  • 10g grated ginger
  • 1 garlic clove, grated
  • 1 tsp chilli flakes (optional)

Whisk until smooth.

Method

  • Cook soba noodles according to package instructions (usually 4–5 minutes).
  • Drain immediately.
  • Rinse thoroughly under cold running water until completely cool.
  • Soak in ice water for 2 minutes.
  • Drain well.
  • Toss with 1 teaspoon sesame oil to prevent sticking.

 Build Each Jar

  •  Bottom Layer - 45ml dressing

  •  Second Layer - 50g carrots

  • Third Layer - 45g cucumber

  • Fourth Layer - 50g edamame

  • Top Layer - 80g cooked soba noodles

  •  Finishing - Sesame seeds, Spring Onions, Microgreens  

Serve

 Shake well before eating OR Invert into a bowl and toss.

 Repurpose

 Add:

  • 250ml hot chicken broth
  • Bok choy
  • Mushrooms

and make into an instant soba soup noodles.
